A product saves with any subset of attributes filled. Empty attributes are neither required nor stored, and clearing or removing an attribute removes it.
Removing an attribute keeps every remaining attribute's value on its own row.
This applies to all attribute types — default, custom and AGEC — and is most noticeable if you run with many default attributes configured.
